Broccoli Cheddar Twice-Baked Potatoes
Ingredients
- 4 medium-sized baking potatoes- I used 6 red potatoes
 
- 1 cup finely chopped broccoli florets
 
- 1/2 cup shredded cheddar cheese- I used a cup
 
- Milk- This is something that you can use your judgement on until it is very smooth.
 
- 1 tablespoon garlic
 
- 1 cup oil
 
Directions
- Preheat the oven to 400 F.
 
- Put the oil in a bowl and coat the potatoes and place on a baking tray.
 
- Bake the potatoes for about 50 minutes until soft.
 
- Carefully slice each potato in half lengthwise, and scoop the potato flesh into a bowl, leaving the skins on a baking sheet.
 
- Mash the flesh until smooth, and stir in the remaining ingredients. 
Add enough milk so that the mixture is soft and smooth, and add 
salt,pepper and garlic powder to taste
 
- Scoop the filling into the potato skins and bake for 15 to 20 minutes.
