Buffalo Chicken Pasta

I love buffalo chicken everything... as one can see.  I am always looking for new variations of this.  I came across a lot of people making buffalo chicken pasta.. and I had to try it.  Let me tell you this was AMAZING I like it more then wings and will be making this again in the very near future!

Ingredients

  • 1 box of Rigatoni pasta (or your pasta of choice)
  • 1 pound of chicken cut into bite size pieces
  • 1 cups of green peppers chopped
  • 1/2 cup of onions chopped
  • 2 garlic cloves, minced
  • 8 oz of cream cheese
  • 1 cup of ranch or bluc cheese dressing (I used a little less because the people eating this wanted it to be spicy)
  • 2 cups of hot sauce
  • 1.5 cups of shredded cheddar cheese
  • 1.5 cups of shredded mozzarella cheese
  • 3/4 cup of panko bread crumbs
Directions

  1. Preheat the oven to 350 degrees
  2. Cook the pasta to al dente
  3. Add the cooked chicken, peppers, onions and 1 cup of each cheese to the noodles and mix well
  4. Place the garlic, cream cheese and half of the hot sauce in microwave for 45 seconds.  Mix well until very smooth, place in microwave for longer if cheese is not melted.
  5. Taste the mixture and add your ranch and more hot sauce if needed.
  6. Pour your mixture over the noodles and mix well.  Taste again to make sure you do not need more hot sauce or ranch.
  7. Transfer mixture into a greased casserole dish.
  8. Place the rest of the cheese and breadcrumbs on top of mixture.
  9. Bake for 30-40 minutes or until golden brown
  10. Let set for 10 minutes and serve.
